A delicious breakfast (or any time of day) sandwich!
Preheat your oven to 350°F. Line a baking sheet with foil. Cut 4 strips of bacon in half giving you 8 short strips (you will probably only need 7). Weave the bacon together on the foil lined sheet making either a 4x4 or a 4x3 strip weave.
*NOTE* You do not have to weave your bacon, but it makes the bacon stay in your sandwich better.
Bake for 25-30 minutes or until the bacon is to your liking. Remove from oven and place on paper towels to remove excess grease.
Put bread in toaster.
In a bowl, whisk together your egg(s) and milk.
Put butter, or oil in a hot pan to keep the eggs from sticking (I use coconut oil). Pour the egg(s) into your pan on medium high heat and scramble (or fry) your egg(s). Once cooked, remove from heat and mix in your cheese. (If you fried your egg, place the cheese on top and let it melt a little.)
Put miracle whip (or mayonnaise) on toast. Put egg(s) and bacon between your toast slices. Enjoy!
*NOTE*
One egg is plenty for a sandwich, but if you are extra hungry, two is great. I use 1 slice of cheese per egg, but it can be modified to your taste. This sandwich can get messy, especially with 2 eggs.
Other great additions are tomato, avocado, and many other things you could mix in to your eggs like sautéd onion and bell pepper.
