Crispy baby idaho potatoes sliced and sautéed with bacon, onion, garlic & evoo
Pour enough olive oil to cover a large sauté pan
Bring to medium high heat.
Add in bacon bits and garlic; simmer till slightly brown.
Add in potatoes; try to get about half touching the pan.
Simmer until edges start to brown; stir to get other potatoes to bottom;
Add onion (or shallot) thinly sliced; stir to get onion down and simmer; stir occasionally till evenly browned.
Serve.
