Tasty appetizer that melds the great taste of bacon with the sweetness from dumpling squash. This dish is low carb, easy to make and can be prepared ahead of time.
Preheat oven to 350
Trim the ends of the squash and cut it in half (lengthwise) from stem to opposite end.
Scoop out the seeds and pulp.
Peel skin.
Slice into ¾-inch thick squares.
Mix butter and spices together.
Combine spiced butter with squash pieces. Coating well.
Cut bacon in half.
Wrap each squash piece with bacon
Roll wrapped squash in brown sugar.
Bake at 350 degrees for 40 - 45 min.
Buy squash that has dark green skin with some orange and is without soft spots
Be sure to use a very sharp chef’s knife to cut into the squash
Store acorn squash in a cool dark place (like your pantry)
