These are an amazing little appetizer that will be gone in minutes!
Preheat oven to 500 degrees and line a large rimed baking sheet with parchment paper. Stuff each date with a chestnut half and place on the sheet. Snip off the corner of a ziploc bag; fill with ricotta cheese. Pipe into each date until just full. Place the prepared date on a slice of bacon, roll it up and secure with a toothpick. Arrange the wrapped dates, stuffed sides up about 1 inch apart. Bake until the bacon is golden and crisp, 15 to 20 minutes. Transfer to paper towels to drain, cool slightly before serving.
