Suggest a better descriptionPreheat oven to 350. Spray a 13 x 9 inch baking dish with nonstick cooking spray.
In a medium saucepan, heat 4 cups milk and butter over medium low heat until bubbles begin to form around the edge of the pan. Slowly add grits, whisking until smooth. Cook for 4 to 5 minutes, whisking constantly, or until thickened. Remove from heat, and add cheese and salt, stirring until cheese melts.
In a small bowl, whisk eggs until smooth. Add remaining 1/2 cup milk, whisking until combined. Slowly add egg mixture to grits whisking until combined. Spoon into prepared baking dish.
Bake for 30 to 40 minutes or until center is set. Spoon herbed creole shrimp topping over baked grits. Let stand for 5 minutes before serving.
