Ready in 45 minutes
I have been looking for a recipe for a corn casserole for a while, and this one was good. It is based on, but not the same as a recipe from www.allrecipes.com. I tweeked it a little. ;) It makes a nice holiday dish, and I think it could be spiced up some with just a tiny bit of diced jalapeno pepper.

Preheat oven to 350 degrees.
In a medium bowl, cream together butter and cream cheese. Mix in the two cans of corn, chile peppers, and 1/2 can of French fried onions. Pour mixture into a one quart casserole dish.
Bake at 350 degrees for 15 minutes. Remove from oven and sprinkle the remaining French fried onions over the top of the casserole. Return the dish to the oven and bake for an additional 15 minutes or until the onions on top are slightly browned.
vpetrick 1y agoI didn't have French fried onions, so I crushed pototoes chips on top, so delicious, everyone enjoyed it!!
BroxMom 5y agoMade this today for Father's Day as a side dish. Everyone loved it! I didn't put chile peppers, though; just added butter salt and black pepper, and it turned out great! Thanx for the recipe!
