Crispy spinach - not deep fried
Preheat oven to 350 degrees F.
Dry the spinach leaves in a salad spinner.
Place the leaves in a large bowl, and lightly drizzle with olive oil.
Sprinkle with just a little bit of salt, and fresh ground black pepper.
Toss gently with tongs.
Spread the leaves out on a single layer on a foil covered baking sheet fitted with a wire rack.
Bake for about 10 minutes, until the leaves are crispy.
Serve immediately.
Try it with toasted sesame seeds and/or a finely minced garlic clove added just before baking.
