Baked fish
Sauté onions and garlic in olive oil for five minutes, add diced tomatoes to pan with salt, pepper, and Cajun seasoning to taste. Sauté with tomatoes for another 5-10 minutes. Line half of tomatoe and onion mixture into the bottom of a glass baking pan. Set fillets on the top of the tomatoes in the pan, rub with olive oil, salt, pepper and Cajun seasoning to taste. Put remaining tomatoe mixture on top of fillets. Cover with tin foil and bake about 15-20 minutes removing the tin foil for the last 5 minutes.
I have made this with halibut, cod, haddock, and crappies. Quantities of fish depend on size of fillets.
