Herbed garlic with goat cheese - great with an Italian meal!
1. Preheat oven to 375?.
2. Remove most of the loose skins from garlic and arrange cut side up in a covered medium baking dish. Place butter slice on top of each garlic and drizzle with oil. Pour 1 1/2 cup of broth into dish. Arrange sun dried tomatoes around bulbs in dish. Sprinkle herbs over all. Cover and bake until garlic is tender, basting occasionally with broth. About 1 hour and 15 minutes. Add remaining broth when broth runs low. When garlic is tender, add goat cheese to dish and continue baking uncovered until cheese is just melted about 15 minutes. Garnish with fresh basil and serve with warm bread or vegetables.
