Easy to make and surprisingly tasty way to pep up mashed potatoes.
Boil and drain potatoes. Cut into cubes and fold in cream cheese, sour cream, cheddar cheese, butter, onion powder, garlic, and parsley. Mash well by hand, with ricer, or with an electric mixer. Place in a casserole dish and bake for 30 minutes at 350 F. (Can be made ahead).
