Suggest a better descriptionPreheat oven to 450 degrees and spray baking sheets with cooking spray. Set aside
In a large bowl, add the cut potatoes and drizzle oil all over them and toss to coat the potatoes well.
Season with salt and pepper. Divide up the potatoes on two baking sheets and bake for 30 minutes, or until browned and tender.
After 30 or so minutes, increase the oven temperature to 500 degrees and bake for another 5-7 minutes until they are crisp and brown.
In the meantime, in another bowl, mix together the oil, garlic, and parsley.
Once the fries are done, using tongs, put the hot fries in the bowl with the garlic oil and toss and coat. Season with salt and pepper to taste.
