A healthier alternative to traditional shrimp scampi
Preheat oven to 425 degrees
Combine shrimp, lemon juice, garlic, paprika and salt and pepper. Pour into small baking dish
In a separate bowl, combine Corn Flakes, butter, Parmesan cheese, lemon zest and parsley until mixture is course and mealy.
Sprinkle corn flake mixture over shrimp and place in oven. Bake until shrimp are pink and cooked through.
* A nice substitute for Corn Flakes could be Panko bread crumbs. :)
