Everyone LOVES these. Great party food!!!
1. Preheat oven to 400.
2. Boil Pasta. Set aside in large bowl.
3. Chop tomatos & zucchini. Combine with pasta in bowl. Season with salt and pepper.
4. Spray cupcake tins wit non-stick spray and coat with breadcrumbs. Shake any excess off.
5. Add provolone and cheddar cheese to pasta and vegetables. Mix till throughly combined.
6. Add 2-3 tablespoons pasta mixture to each muffin tin. Top with a drizzle of olive oil and sprinkle with parmesan and breadcrumbs.
7. Bake for 12-15 minutes. Let cool completely, then gently removie with a spoon.
The more cheese the better. I like to sprinkle more cheddar cheese on top with the parmesan!!!
