Ready in 45 minutes

Onion rings, but baked.

2 or 3 large yellow onions
1 to 2 cups panko bread crumbs
1 cup flour
3 Eggs
2 tablespoons milk
olive oil cooking spray
salt and pepper; to taste

Preheat oven to 385 degrees fahrenheit.

Slice onions into circles of desired thickness.

In a bowl, whisk the eggs and milk and set aside.

In separate bowls for each, add the flour and breadcrumbs. Season both with a little salt and pepper.

Dredge onions in flour first, then egg mixture, then panko crumbs.

Spray cooking spray on a baking sheet. Arrange breaded onions on the sheet and spray with olive oil cooking spray.

Bake at 385 F (or a little higher) for 10 minutes. Flip and bake for another 10 minutes until golden brown.

Enjoy as is or dip in your favorite condiment!

These are pretty good. Certainly tasty in their own right, but can't compare to traditionally made onion rings.
