Preheat oven to 350F. Mist a deep casserole dish with nonstick cooking oil spray and set aside.
Combine the partially cooked penne and spinach in a large mixing bowl and stir well. Put the remaining ingredients except the bread crumbs in a blender and process until smooth. Pour over the pasta and stir well.
Transfer the mixture to the prepared casserole dish and sprinkle the bread crumbs over the top. Bake for 35 minutes or until bubbly. Remove from the oven and let rest for 10 minutes before serving.
