Great alternative to lasagna
1) Prepare pasta as directed. Then rinse with cool water and set aside.
2) Break up sausage into clumps and brown on medium heat in a large saute pan.
3) Remove sausage from the pan with slotted spoon, and set aside Drain the pan.
4) Add onions and mushrooms to the pan. Increase heat to medium high. Cook, stirring frequently until the onions become translucent and the mushrooms have given up some of their liquid.
5) Add minced garlic and red chili pepper flakes and cook one minute more.
6) Add marinara sauce and water to the pan with the onions and mushrooms. Return sausage to the pan along witth Italian Seasoning and parsley. Bring to a simmer and reduce the heat to lowest simmer setting. Cook for 10 to 15 minutes or so.
7) Place cooled pasta in a large bowl and toss with olive oil, then add Parmesan and eggs.
8) Preheat oven to 350. Rub the inside of a 13" x 9" inch casserole dish with olive oil.
9) Spread 1 cup of sauce over bottom of dish. Then place half the pasta in an even layer. Cover with half the remaining sauce. Then dot sauce with all of the ricotta/cottage cheese. Sprinkle half of the Mozzarella over the ricotta layer. Layer again with remaining pasta, the remaining sauce and remaining Mozzarella.
10) Cover with foil and bake for 40 minutes.
11) Remove foil and bake for additional 20 minutes.
12) Let rest for 10 minutes before cutting into squares and serving..
