Suggest a better descriptionPreheat oven to 350 degrees. Layer the fillets in the bottom of glass baking dish, no need to grease the dish. When layering, overlap the thin portions of the fillets to make the fish about the same thickness across the dish.
Season the fish with the seasoning. Layer on the sliced vegetables, lemon and lime. Pour the lemon and lime juice over the dish. You can sprinkle some olive oil or put some pats of margarine or butter over the dish but it is not essential.
Sprinkle more of the seasoning over the dish. Cover with lid or aluminum foil. Place in oven, cooking time will vary by the amount and thickness of the fish. Generally it will be about 15 minutes but cook until the center pieces of fish are just flaky. Don't overcook!
The amounts will vary by how much fish you are cooking, what you like and what is on hand. I don't follow this strictly and just use what is on hand at that time.
