This balsamic chicken is a delicious, bright and sweet combination of mint, grapes, balsamic vinegar and chicken. Savory and sweet. Really enjoyable chicken dish. One warning, however -- it's quite challenging to clean up in a non-stick pan if you let the glaze carmelize too long!

"Enjoyed this again, and I cannot say enough good things about this recipe. If you've looked at the list of ingredients and say you probably won't like it, give it a try and you might be surprised. The flavors combine in a sweet/minty/exquisite way that's hard to describe. HOWEVER, do be careful about your choice of the pan. Boy is that sugar that the balsamic vinegar leaves behind difficult to clean up off a stainless-bottomed pan! The caramelization is what gives it the flavor, so don't be afraid to let it go a little, but enlist someone with elbow grease in the cleanup ahead of time. "

4 whole skinless and boneless chicken breasts
1 tablespoon olive oil
1/2 cup Balsamic vinegar
1/4 cup olive oil
2 cloves garlic; pressed or mashed
1/4 cup Brown sugar
1/4 cup fresh mint; chopped
1 teaspoon Salt
1 1-oz bag baby spinach
2 bulbs fennel; cut julienne, about 3 cups
2 cups red grapes; halved
1/4 cup fresh mint; chopped
1/4 cup olive oil
2 TBLS Red wine vinegar
1 clove Garlic; minced
2 shallots; minced
1/4 teaspoon Salt
3/23 teaspoon Black pepper

Original recipe makes 4 Servings



In medium bowl, whisk together balsamic vinegar, olive oil, mashed garlic, brown sugar, 1/4 cup fresh mint and 1 teaspoon salt. Pour ingredients into large zipper-lock bag; add chicken and seal bag. Turn chicken to make certain that all parts are coated with marinade. Refrigerate for at least 2 hours and up to 24 hours.

To cook chicken, place large skillet on stove over high heat. When very hot, add 1 tablespoon olive oil. Remove chicken from marinade and let excess drip off. Add chicken to skillet and saute, turning, until both sides are nicely browned and chicken is cooked through, about 5 - 7 minutes per side. Transfer chicken to plate and keep warm.

In large bowl, toss spinach, fennel bulb, grapes and 1/4 cup fresh mint. In small bowl, whisk together 1/4 cup olive oil, red wine vinegar, minced garlic, shallots, 1/4 teaspoon salt and black pepper. Pour vinaigrette over slaw and toss well to coat. Divide slaw among four plates. Cut chicken into long, thin strips and arrange on top of slaw. Garnish with additional mint slices, if desired.

This was PHENOMENAL. Who would have thought that grapes, balsamic vinegar, red wine vinegar, spinach and mint would create the basis for such a wonderful recipe? (I didn't.) But I tried it and my wife and I both loved it. A keeper. Served on its own with a crisp Savignon Blanc. (Note, they were out of fennel at my local market, so I skipped that part of the recipe but left all else unchanged.)

Refreshing summer dish!! Whole family loved the new flavors and we got to use the mint from our garden! I only had one fennel bulb so I added celery and a green onion.

Like many, I was intrigued by the ingredients. I thought that I would like this, but I was not so sure about my daughter and wife. Everyone loved the chicken and the slaw! The only addition I made was to add the marinade to my skillet after browning both sides of the chicken. I covered the skillet and steam/cooked the chicken the rest of the way. It came out juicy and added a little more flavor (IMHO). Great recipe.

I've made this several times now and portion it out for my lunches. It tastes great freshly made and it also makes for a yummy gluten free meal later; I keep it in three containers and mix at work - chicken (to reheat), slaw mixture, then spinach (so it doesn't get limp) My husband loves it for lunch too.
