Oven roasted balsamic onions for appetizer toppings, burger condiments, etc.
Preheat oven to 375ยบ. Cut onions in half, peel, slice thinly. Toss in cast iron skillet with all other ingredients except capers. Cover skillet tightly and bake for about 45 mins, stirring once or twice, or until tender. Stir in capers, correct salt & pepper. Serve on crostini, crackers, or as condiment for grilled burgers, especially lamb burgers.
To speed things up: Cook over medium-high flame for about 10 mins, stirring to distribute heat. Then bake/roast in oven for 20-25 mins.
Keeps well. If you don't have red onions, use yellow. If you have fig balsamic, definitely use it! More pepper is good. More capers is good. Makes about 2 cups.
