Easy and delicious. I've had this recipe for years and it's always a favorite.
Preheat oven to 350 degrees and spray a loaf pan with cooking spray. Cook brocolli according to package directions, drain, and set aside, but don't let it get cool. Mix the remaining ingredients in a medium mixing bowl and add the hot brocolli and mix well. Transfer to the prepared baking dish and bake for 30 minutes. Check to make sure the rice is no longer firm before serving. If it's still a little firm, bake it a little longer.
