Makes about 4 loaves: Enough for a crowd, church social, or just enough to have for desert later. Re-warm and serve with a scoop of french vanilla ice cream or a nice brandy sauce.
Preheat oven to 350 degrees. Oven rack(s) as close to the middle of the oven as possible.
Butter & flour (or use Baking Spray (includes oil & flour) or use spray oil & flour) the bottoms & sides of 4 loaf pans. Typical loaf pans are 9" x 5" x 3". Set aside.
Place nuts on a baking sheet. Toast for about 10 to 15 minutes. Let cool and then chop (or use a rolling pin) to make them coarsely chopped.
In a large bowl, combine the dry ingredients: flour, sweetener, dry milk, baking powder, baking soda, salt, cinnamon, cardamon, and nuts.
In a medium bowl, mix the wet ingredients: bananas, melted butter, eggs, and vanilla.
With a rubber spatula, carefully fold the wet ingredients into the dry until combined. Do not over mix. The batter will be thick and chunky. Making the batter smooth will yield tough and rubbery bread.
Scrape batter to just slightly less than half of the way up the sides of your prepared pans
Optional: Place sliced bananas on the top of the batter for garnish.
Bake until the bread is a golden brown. This will take about 55 to 60 minutes on average. Testing pick should come out of the center clean of batter, but still moist.
Place pans on a wire rack to cool and the remove the bread from the pans
Serve warm or at room temperature.
