this has been a family favorite for 20+ years. I give them out around the holidays (among other tasty goodies)


1 teaspoon baking powder
2 1/2 cups spelt; or gluten free flour
1/2 teaspoon baking soda
1 1/2 cups mashed, ripe bananas; add to bananas
1/2 cup cold coffee; add to bananas
1 cup soft butter; add to butter
1 1/4 cup sugar; or honey, add to butter
1 egg; add to butter/sugar
1 cup mini chocolate chips

Original recipe makes 24 Servings



stir flour and other dry ingredients together set aside.

beat butter and sugar until mixed. Add coffee/bananas and continue mixing. Add egg and mix. stir in flour mixture gently. don't overmix. add choc chips.

Put in greased pans. Bake 25-30 min. in 350(F) oven


i usually add a little extra coffe as it makes it moister (a good thing).

Bake at 375. I used leftover coffee to add moisture. I've never had a problem getting them out of the pan and they have never been crumbly. ALL my family request these often!! I think if you just add more cold coffee to them they will never be dry

Does not say what temp to back at...Followed recipe, so used lots of non stick spray, but muffins wouldn't come out. Eating crumbs.

for some reason this doesn't show the flour amount on my iphone ap. It should show 2 1/2 cups of flour
