"This muffin is awesome! I only put in 2 bananas, but that ratio worked out pretty well for me. I also added a little bit of cinnamon and vanilla into the batter. Put the topping on like 5 minutes after they've been baking! I tried it before I put them in the oven and they turned out kind of sloppy, but putting it on a little after they've been in there worked out pretty well. I can't wait to use this recipe again!"

1 1/2 c All-purpose flour
1 ts Baking soda
1 ts Baking Powder
1/2 ts Salt
3 lg Ripe bananas; mashed
3/4 c Sugar
1 Egg; lightly beaten
1/2 c Butter; melted
1/3 c Brown sugar; packed
1 tb All-purpose flour
1/8 ts Ground cinnamon
1 tb Butter

Original recipe makes 12 Servings



In a large bowl, combine dry ingredients. Combine bananas, sugar, egg and butter; mix well. Stir into dry ingredients just until moistened. Fill greased or paper lined muffin cups three fourths full. Combine the first three topping ingredients; cut in butter until crumbly. Sprinkle over muffins. Bake at 375 degrees for 18-20 minutes or until muffins test done. Cool in pan 10 minutes before removing to a wire rack. Yield:1 dozen

Crumb topping too sweet and sugary .I think 1 tablespoon of butter for topping was not enough. Muffin tasted more like Banana cake not a muffin.

Best muffin I've ever tasted...1st time I have used this recipe and will definitely be using it again only next time I would put the topping on for the last 10 mins cooking time as this time it sunk...but tge flavour is fantastic and the texture is crunchy, sweet...Mmmm
