Great muffins


1 1/2 cups All purpose flour
1 teaspoon Baking soda
1 teaspoon Baking Powder
1/2 teaspoon Salt
3 large ripe bananas; mashed
3/4 cup Sugar
1 whole Egg; lightly beaten
1/3 cup Butter; melted
1/3 cup Brown sugar
1 tablespoon All purpose flour
1/8 teaspoon Ground cinnamon
1 tablespoon Butter

Original recipe makes 1



In large bowl, combine dry ingredients. Combine bananas, sugar, egg and butter; mix well. Stir into dry ingredients, just until moistened. Fill greased or paper line muffin cups 3/4 full. Combine 1st three topping ingredients; cut in butter until crumbly. Sprinkle over muffins. Bake at 375F for 18-20 minutes or until test done. Cool in pan 10 minutes before removing.

This is my official go to recipe for bake sales, pot lucks, treats for kids activities, breakfast, etc. I usually make mini muffin size and sometimes add chocolate chips. I keep the crumble topping on hand in the fridge so it's easy to pull out anytime I need it.

Hot out of the oven and they are delicious. Will definitely make again. Added a tsp of vanilla and some cinnamon to batter. Would really be good with walnuts also!!!!

Nice and fluffy- use bakers sugar instead of strudel topping for a simpler look on top prior to baking
