Banana Nut Bread

Best I've ever tasted - the sour cream makes it luscious. Makes 2 loaves.


3/4 cup butter; softened
2 Eggs
1 t. Vanilla
1 1/2 c. Sugar
2 t. Baking Powder
1 1/2 cups bananas; mashed
2 c. Flour
3/4 t. Salt
1 t. Baking soda
1/2 cup buttermilk or sour cream
3/4 cup Walnuts; or other nuts

Original recipe makes 20 Servings



Mix wet and dry mixes in separate bowls, then combine. Pour into two loaf pans and bake at 325 F. for 1 hour and 15 minutes. Don't undercook.

This recipe turned out incredibly well. I, too, used non-fat Greek yogurt in place of sour cream and Splenda in place of sugar. I halved the recipe to only fill one loaf pan, and cut the bake time to a little less than an hour. Be sure to grease the pan before filling it. Delish!

A family favorite and a great quick breakfast. I also add an apple or two to the mix, or substitute Greek yogurt.
