Suggest a better descriptionPreheat the oven to 200C/400F/gas 6. Peel the skin off the breasts, sprinkle with the salt and peppercorns and pat down well. Heat the oil and butter in a grill pan until very hot then put in the duck breasts, skin side down. Cook for 5 minutes if you like your duck rare or 8-10 minutes if you prefer them well done. (The cooking time will vary depending on the size of the duck breasts.) Serve the duck breasts hot, sliced diagonally.
