Barbecue Beans

No barbecue is complete without this classic side dish.

Ingredients

5 slices bacon
1/2 medium onion; chopped
2/3 cup Brown Sugar; firmly packed
3/4 cup barbecue sauce
1 15-oz can kidney beans; rinsed and drained
1 15-oz can butter beans; rinsed and drained
1 15-oz can pork and beans; undrained
2 tablespoons Molasses
2 teaspoons Dijon mustard
1/2 teaspoon Salt
1/2 teaspoon Pepper
1/2 teaspoon Chili powder

Preparation

Cook bacon in a Dutch oven until crisp; drain and crumble.

Cook onion in bacon drippings to soften. Stir in bacon and all remaining ingredients. Spoon into a 2 -quart baking dish. Chill for 8 hours or overnight, if desired.

Bake bean mixture at 350 degrees for 1 hour, stirring once.

Notes

I like to spice this up with some cayenne pepper and/or hot sauce. You can also cut back the amount of sugar and add a bit of root beer, which really accentuates the flavors. During baking, a couple of partially cooked bacon slices may be laid across the top of the beans for added flavor.
