This is a moist delicious cake. You can definitely tell it's not made from a mix.
Preheat oven to 350 degrees.
Grease two 9-inch layer pans with shortening and flour sides and bottom, tapping out excess flour.
Stir together dry ingredients (flour through baking soda) in a large mixing bowl at low speed. Stir in mayonnaise. Scrape down sides of bowl with a spatula. Gradually stir in water and vanilla until smooth & blended.
Spread batter in prepared pans, dividing evenly and making sure it''s level in the pans.
Bake on the center rack for about 30 minutes, or until cake springs back when touched.
Cool cakes completely. Run a knife around edge of pan before removing cake from pan.
