Basic polenta to go with any polenta dishes.
Bring the water and salt to a boil in a heavy saucepan.
Gradually add polenta, whisking constantly. Stir in half of the
butter. Cook over low heat, stirring constantly with a wooden
spoon, 20 minutes. Mixture will become quite thick. Stir in
remaining butter and Parmesan; serve hot.
