This is a basic lasagne recipe. You can adjust by adding ingredients to your taste.
Add diced onion and garlic to ground beef. Stir in pan until the meat is browned thoroughly. Add 2 cans of tomato sauce, 1 can mushrooms (including liquid), salt, and oregano. Heat to bubble.
While sauce is heating, mix in a small bowl the cottage cheese, Parmesan cheese, and egg. (I estimate the amounts for the two cheeses here)
Now comes time to layer everything in the lasagna pan. Don't be afraid to break noodles to fit. Spread everything as evenly as possible:
1. 1/3 of sauce
2. layer of noodles
3. 1/3 of sauce
4. noodles.
5. all of the cottage cheese mixture
6. noodles.
7. Remaining sauce.
8. Sliced cheese(s) When I use provolone, I put one thickness of it and 2 of the mozzarella.
Cover with foil and bake at 375 degrees for 45 minutes.
Remove the foil and bake another 10-20 minutes or until the mozzarella browns slightly.
Remove from oven and let stand for 5-10 minutes before serving. This will allow the lasagna to set for easier cutting and serving. The longer is stands, the more tender the noodles will become as well.
I usually add some bell peppers to the sauce as it cooks. I also add some provolone slices on top along with the mozarella slices. You can also use Italian sausage completely in place of the ground beef, but I prefer a 50/50 mix.
