A delicious side dish or salad. Serve it warm or room-temperature.


2 pound Tomatoes; diced
1 4-oz can Mushrooms; sliced
3 cloves Garlic; minced
0.5 teaspoon Salt
0.5 pound Pasta; penne or ziti
0.25 cup Basil; dried / crushed
0.5 cup Basil; fresh / Chopped
0.5 cup Cheese, Fontina; diced
3 tablespoon Red wine vinegar
1 tablespoon Olive oil
Pine nuts; optional

Original recipe makes 4



1. Place tomatoes, mushrooms, garlic and salt into a large bowl and toss. Let stand 1 hour to form juices

2. Cook pasta as directed

3. Add basil, cheese, vinegar and olive oil to tomato mixture. Mix well

4. Toss hot pasta in the sauce. Season to taste with salt & pepper. (& pine nuts if desired)


Serving suggestion: Cheesey garlic bread and asparagus

I actually heated up the tomato mixture since I was serving this as a main course. It worked well, the cheese melting to smooth lumps of deliciousness.

Is it possible to make this with fresh mushrooms? It sounds great, but I have an aversion to canned mushrooms.
