Add rice, stirring to coat. Cook for 1 minute, stirring occasionally. Stir in apple juice, mixing well to combine. Stir in water. Cover and lower heat to medium-low. Simmer, tightly covered, for about 40 minutes, until rice is tender and water is absorbed. 3. If using fresh peas, stir them into the rice halfway through the final cooking time.
