- put several large wood chunks in water to soak
- Pre-heat Big Green Egg to 500-600 degrees
- put large Dutch Oven on Egg, close lid and pre-heat for 10-15 minutes
- add the bacon and brown
- add onion and sauté until golden brown
- add bourbon and brown sugar
- reduce to a thick syrup
- add beans and water
- add remaining ingredients
- stir
- remove pan from grill
- add several wood chunks that have been soaking in water for an hour or more
- put plate setter in Egg - if you have one
- place Dutch oven back in Egg, reduce heat and cook for 3 hours uncovered
- add additional liquid if needed, cover and cook for an additional hour or until beans are cooked through
