very spicy, meaty enchiladas
In a medium to large saucepan heat oil over medium heat. Add onions, garlic and paste, simmer for three minutes, stirring constantly. Add water, vinegar and spices, cover and simmer fifteen minutes. stir very often but be careful as it splashes. Allow to cool. In a separate pan, brown onions and garlic for hamburger in oil, then add hamburger and cayenne and chili and brown it. Drain oil. Heat oven to 350 degrees. In a 9x13 cake pan (it takes two), spoon some sauce to cover the bottom of the pan (this reduces sticking). then microwave tortillas, a few at a time for 15 seconds. Then dip each tortilla in sauce to cover both sides, place in pan, spoon hamburger into tortilla, sprinkle some cheese, then roll tortilla up. repeat until pan is full, each pan usually holds 12 tortillas. Then cover with cheese. Repeat with second pan. When both pans are full, spoon leftover meat (if any) on top of enchiladas, then spoon leftover sauce evenly between the two pans. Bake at 350 for 20 to 30 minutes till cheese is melted.
very messy and time consuming to make, but so worth it!
