This is a delicious and easy meal-in-one-dish. If you use quick cooking brown rice instead of white rice, this is South Beach friendly (Phase 2).

1.5 lbs cabbage; (about 6 cups), sliced
3 medium carrots; sliced

I like casserole dishes like this. They are easy to make in a Dutch Oven camping. The only things I changed was adding diced tomatoes to it and only a 1/4 cup of water.

This was soooo easy and my husband loved it, so did the granddaughter! Simple any really good, don't substitute the beef broth for chicken, I almost did and the flavor wouldn't have been so good. Next time I will add fresh herbs, i.e. thyme.
