Beef and Cabbage Casserole

This is a delicious and easy meal-in-one-dish. If you use quick cooking brown rice instead of white rice, this is South Beach friendly (Phase 2).

"This was soooo easy and my husband loved it, so did the granddaughter! Simple any really good, don't substitute the beef broth for chicken, I almost did and the flavor wouldn't have been so good. Next time I will add fresh herbs, i.e. thyme."

Ingredients

1 pound Ground beef
2 medium onions; sliced
1.5 lbs cabbage; (about 6 cups), sliced
3 medium carrots; sliced
2 teaspoons Salt
1 cup uncooked long-grain rice
1 14-oz can beef broth
1/2 cup Water

Preparation

In Dutch oven, cook burger and onions till burder is well browned. Remove from heat; add cabbage, carrots, salt. Mix well. Pour rice in 3-quart casserole. Spoon beef mixture on top. Pour beef broth and water over the whole thing. Cover; bake at 350? for one hour. 6 servings, 460 calories each

I like casserole dishes like this. They are easy to make in a Dutch Oven camping. The only things I changed was adding diced tomatoes to it and only a 1/4 cup of water.
