This real Chuckwagon Chili combines beef cubes and spicy sausage. It looks and tastes authentic with or without beans
1- Cook Charizo Sausage in a large, heavy sausepan, stirring often. After 10 minutes, drain off fat. Remove Sausage
2- In same pan, heat oil. Add Beef, a few cubes at a time. Saute until well browned. Remove. Repeat with remaining beef.
3- To the saucepan, add the Onion and Green Pepper. Saute briefly until slightly softened. Stir in Garlic
4- Return Chorizo and Beef to saucepan. Add Broth, Tomtatoes, Chili Powder,Cumin, if used, Crushed Red Pepper, Salt, Pepper, and Jalapeno, if used.
5- Bring to a simmer. Cover. Either cook on top of stove or in a 350 degree oven for 1 1/2 to 2 hours.
6- Add Chilli Beans, if used. Cook another 30 minutes, uncovered. Server piping hot.
Any Spicy Sausage can be used in place of Charizo. But be sure to add the sausage because it makes a real real chili.
Good served with squares of carnbread and carrot sticks.
I have made this chili a couple times and found that replacing the boneless chuck with ground beef made for a easier to eat and better texture of chii. Try it both wayse and let me know what way you like it better.
