What's not to like about beef, bacon and a good Oaxacan marinade? Exactly! Go on, enjoy...
• Preheat grill to medium-high.
• In a bowl combine beef, white onion, salt and bacon; being careful not to over mix. Form 8 even thin patties, about ½-inch thick. Place in a covered container and smear the Oaxaca paste over them. Cover tightly and refrigerate for at least an hour.
• Place red onion and jalapenos in a grilling basket. Spray onion and japaneos with olive oil. Place basket on grill and cook until onions are soft and slightly charred but not burned. Place on table as a garnish along with the lettuce, tomato and condiments.
• Grill burgers over medium-high heat until desired doneness is reached, approximately 4 minutes each side if you want them medium.
• Serve in buns with garnishes. Provecho!
