super tasty, super tender ribs with a deeply savoury BBQ sauce
Mix the marinade ingredients together in a large plastic bag. Add the ribs ensuring they are well coated and refrigerate for 24 hours.
Heat the oil and add the onions and fry them for approximately 20 minutes until browned. Pour in the beer bring to the boil and reduce by half. Add the stock, treacle, thyme and oak chips if using bring to the boil. Place the ribs in a large deep tin cover with the onion braising liquid, cover tightly with foil and place in the oven set at 150*C for 5 hours.
Remove the ribs and allow the liquid to cool and settle, skim off the fat. Strain the liquid into a pan and reduce until thick and glossy then whisk in the ketchup, mustard and brown sauce.
To finish BBQ over hot coals until gently charred then baste with the sauce until it forms a sticky charred to your liking.
