A slow cook beef curry using Nandos coconut simmer. Can be flexible with the added vegetables to what is readily available in the pantry. Can vary in time to make and quantity depending on the type of meat used and the quantity of meat and vegetables added to the pot.
Heat some oil in a deep saucepan. Add beef, onion & garlic and cook until meat is brown and onion & garlic are soft and fragrant. Add the simmer sauce and the remaining vegetables to the pot and cover. Cook until meat is tender (which will vary on the cut of meat), on low to medium heat and stir regularly. Meanwhile cook rice and serve together.
