Preheat oven to 350 degrees.
Saute onion and peppers in frying pan.
Add ground beef (you can do this in a separate frying pan, so that you may drain the fat afterwards).
After beef is browned, add tomato sauce and enchilada sauce. Stir all together in pan. Turn off heat.
In a greased baking dish, take the tortillas, add 2 spoonfulls of beef mixtures, add a little shredded cheese, wrap and place seam down in baking dish. Fill baking dish with filled tortillas. Add remaining beef mixture over the top of all wraps.
Bake for 25 minutes, covered.
Uncover, add cheese to top of wraps, bake for additional 5 minutes or until cheese is melted.
Serve with sour cream and olives.

JldozerAdded black beans to the mixture. Used 1/2 of the sauce in the filling and the other half on top of the enchiladas. Family was debating on whether they liked the sauce added on top before cooking (made tortillas softer) or during last few minutes (made tortillas crisper). I added it before but didn't completely cover a few so those were crisper.2y ago
