Quick and Easy

"I loved the creamy sauce it made with the tomato & cream of mushroom soups! I didn't have any enchilada sauce but I added some onions to saute with the beef & stirred in a few tablespoons of salsa with the soups. I garnished with sour cream, chives, diced tomato & lime wedges. Next time I'll add some taco seasoning to the meat and more salsa to the soups."

I used Red Gold petite diced tomatoes with Chipotle (in place of tomato soup) and garnished with green onions. The Chipotle is awesome. photo by Marissa250 Marissa250

Added taco seasoning to the meat and also spread refried beans in the enchiladas before filling with the sauce mixture. Very good and simple!

It was pretty good. The sauce was a little thin so I strained it but it was so so.

This was absolutely delicious! I didn't use the whole 12 oz of all the soups, and I used the Mexican Blend cheese instead. Will definitely be making this again and again!
