This is a terrific and quick recipe made in a Pampered Chef Deep Covered Baker.
Combine beef (or chicken), seasoning mix and salt in a pan on the stovetop. Cook until no longer pink and heated through. Add enchilada sauce, water and salsa. Bring to a simmer and remove from heat.
Meanwhile cut tortillas into 1-inch strips and chop cilantro.
Arrange half of the tortillas evenly over the bottom of the deep covered baker. Top with half of the meat mixture, half of the cheese and half of the cilantro. Repeat layers.
Microwave on HIGH for 5 minutes or until hot.
This is delicious made with beef or chicken. We often cook the chicken ahead of time in the crockpot with either chicken broth or salsa poured over it. It's so easy to shred when it's finished cooking.
