heat the oil and fry the whole spices with the bay leaf for a minute or until they begin to crackle. Add the onions and sautee until translucent. Add the curry powder, ground spices pepper and ginger garlic paste and sautee for 2-3 minutes stirring frequently. Add beef, carrots and sweet potatoes and mix well, season with salt and pepper. Add toms and fry for 2-3 minutes pour in the stock and coconut milk. Simmer for 30-35 mins or until cooked.
