My mom got this recipe from a friend - and it is absolutely to die for!
Coat beef with flour, shaking off any excess. In a large nonstick pot, heat oil over medium-high heat. Add beef; sauté until browned, about 6 minutes, and 0place on a plate.
Add onions to the pot and sauté for 2 minutes, then add the mushrooms and sauté for an additional 4 minutes. Add garlic; and sauté for 1 more minute. Pour off all fat and return beef to the pot. Stir in the tomato paste, and then the broth.
Add enough water to just cover and bring to a boil. Reduce heat to low; simmer until beef is tender, about 1 1/4 hours. Skim off any foam.
Add carrots, potatoes, and green beans. Cover partially; simmer for about 15 minutes.
In a small bowl, mix cornstarch and cold water; stir into stew. Increase heat and boil uncovered for 1 minute.
Sprinkle with parsley and serve with crackers, bread, or over rice.
