Wonderful meal & a beautiful presentation
1. Evenly shape tenderloin by tucking small end underneath. Tie with string & sprinkle with pepper.
2. Melt 2 tablespoons butter in large skillet; add beef and cook on all sides over med-high heat until browned. Reduce heat to medium & cook for 30 min, turning occasionally. Remove from pan; cover & chill for 30 min. Wipe out skillet.
3. Melt remaining butter in skillet & add mushrooms, cook for 2 min. Add parsley & next 3 ingredients. Cook until all liquid is evaporated.
4. Roll out pastry, put mushroom mixture in middle & place beef lengthwise across mushroom mixture. Wrap pastry around beef.
5. Place seam side down, brush with egg & cover & refrigerate for 2 hours.
6. Preheat oven to 400 degrees. Let beef stand at room temperature for 30 min. Bake in oven for 25 min.
