1. Preheat oven to 230?C/Fan 210?C. Heat a non stick frying pan and then spray with the cooking spray. Fry the mushrooms and thyme for 15 - 20 minutes. Set aside. Fry the steaks for 1 minute on each side.
2. Lay 3 sheets of parma ham overlapping each other for each wellington, divide the mushrooms between each wellington and pile in the middle of the ham. Top with the steak. Wrap the ham around each one to make a parcel.
3. Unroll a 20g sheet of filo pastry and spray with cooking oil. Top with another sheet, spray again, top with a final sheet and then cut in half. Place a steak parcel on each half and wrap the pastry around it. Repeat for the remaining steaks.
4. Spray with cooking spray, sprinkle the poppy seeds over each parcel and bake for 10 minutes. Serve with the gravy.
