Suggest a better description1) Preheat oven to 350 degrees Farenheight.
2) Steam the beets in a small saucepan, covered, using a collapsible steamer,
or boil in water over medium-high heat until tender, 12 to 15 minutes for baby
beets and 20 to 25 minutes for small beets.
3) Meanwhile, put the walnuts on a baking sheet and toast in the oven for 8 to
10 minutes or until fragrant and lightly colored. Set aside.
4) Make the vinaigrette: combine the vinegar with salt and pepper in a small bowl
with a whisk or folk until the salt dissolves. While whisking, slowly add the oil
in a steady stream. Adjust seasonings. Set aside.
5) Wash and dry the greens well and put into a large bowl. Wipe the outside of
the endives with a damp cloth, then trim the base separate the leaves; set
aside. Core and thinly slice the apple; set aside.
6) When the beets are cooked, rinse them under cold water until cool enough to
handle. Dry, peel, and then quarter the beets and add to the bowl of greens.
7) Just before serving, toss the greens and beets with about 2 tablespoons of
the vinaigrette. Add more to taste. Divide the greens between 4 to 6 dinner
plates, mounding them in the center of each plate. Arrange the endive and
the apples around the edge of the greens. Add beets to each salad and
sprinkle with the walnuts. Drizzle the remaining vinaigrette over the endive.
