Raspberry, strawberry and blackberry lovers, this is a quick and tasty dessert.
My husband can't believe it's sugarfree!!
I use Martini glasses to present these treats in.
Put the gelatin, hot water, lemon juice and orange rind in a blender and whirl for 10 to 15 seconds to dissolve the gelatin. Add the frozen berries and blend again, jut long enough to mix in the berries.
Put the blender container in the refrigerator for 10 minutes or just until the mixture starts to thicken a bit. Add 3/4 cup of heavy cream and run the blender just long enough to mix it all in (10 - 15 seconds).
Pour into 4 Martini glasses and chill
