"Awesome!!! I tweaked it to make it wheat free and 1) you can't tell the difference 2) they truly are the best banana muffins ever (at least according to me, my 7 year old banana muffin connoisseur, and 6 year old banana muffin hater...she says she only likes these!). To make gluten free, I replaced the all purpose flour with gluten free Bisquick and omitted the baking soda (since it's already in the Bisquick). We had 4 bananas, that needed to go so I also added a 1/4 c more Bisquick to make up for the extra banana. We made some with the brown sugar and some without. They are BOTH delicious!!"
Preheat oven to 375F / 190C / Gas Mark 5
Mash bananas. Add sugar and slightly beaten egg and mix well. Add the melted butter. Make a well in the middle and add the dry ingredients. Bake for 20 min.
I also remember my mother used to add brown sugar to the tops of the muffins before baking. This made them crunchy on top, but I haven't tried it myself.

Dobrodrummer 1 month agoVery tasty! I should have used 1 cup of flour like others suggested, but I will give that a try next time. I did also add the brown sugar on top - and that was an amazing choice!!

Olya88 3 months agoMade these delicious muffins today. I did use 1 cup of flour instead of 3/4 and 1 tbsp of vanilla. I had some brown sugar and sprinkled muffins on top before putting them in the oven.

aviator4245 8 months agoBest banana muffin recipe I have ever tried. Like most I used a cup of flour instead of 3/4 cup. Turned out perfect. They didn't last a day and I doubled the recipe. My yield was 20 muffins. Friends and family gobbled them up. Everyone loved them.
SigP938 8 months agoI used 1/4 cup sugar and 1/4 cup Splenda. Replace the butter with coconut oil and used unsweetened coconut milk instead of evaporated milk. Also sprinkled the top with brown sugar before baking. Very good muffins
