"Awesome!!! I tweaked it to make it wheat free and 1) you can't tell the difference 2) they truly are the best banana muffins ever (at least according to me, my 7 year old banana muffin connoisseur, and 6 year old banana muffin hater...she says she only likes these!). To make gluten free, I replaced the all purpose flour with gluten free Bisquick and omitted the baking soda (since it's already in the Bisquick). We had 4 bananas, that needed to go so I also added a 1/4 c more Bisquick to make up for the extra banana. We made some with the brown sugar and some without. They are BOTH delicious!!"- jjmcain
Preheat oven to 375F / 190C / Gas Mark 5
Mash bananas. Add sugar and slightly beaten egg and mix well. Add the melted butter. Make a well in the middle and add the dry ingredients. Bake for 20 min.
I also remember my mother used to add brown sugar to the tops of the muffins before baking. This made them crunchy on top, but I haven't tried it myself.
ees55 5 months agoTasty banana muffins! I added some cinnamon, vanilla and walnuts for a bit more flavor and they came out very well. The muffins were done a little before 20 minutes.

savannahchase 6 months agoBaked for 20 min turned out wet. Even after an extra 5 min it still turned out wet and just did not taste right. Not sure how people are posting such rave reviews after following the recipe.
TaylorHelen19 6 months agoI just made these I had some overly ripe bananas and I needed to do something with them so I found this recipe. They are the easiest banana muffins I've ever made. They are so moist and sweet. I made one batch of 12 and I had to make more ! They are amazing ! I put a little butter on them and let it melt mmmmm!!

NaruOsaka 7 months agoEasy, moist and yummy. Super fast to make. Only change was I added a tsp of Vanilla.
mzsammie 7 months agoI made these today was in the baking mood but didn't have much around the house.... my family loves banana's and I went on the hunt for something that required banana's :) My son says they were the best and has had 2.... (more if I would let him) My friend came over for coffee... we enjoyed some. They are almost gone! I did add a little more flour. And they were Delish. :) We also made a glaze and drizzled some on.... a fabulous treat indeed!! :) I will be doubling the batch next time!! I don't know if they will even last the rest of the day :D

Crystaljo 7 months agoMy kids loved these!!!! I added 1/2 cup extra flour because of other comments and they turned out great. My 8 year old said he couldn't stop eating them.
