"Awesome!!! I tweaked it to make it wheat free and 1) you can't tell the difference 2) they truly are the best banana muffins ever (at least according to me, my 7 year old banana muffin connoisseur, and 6 year old banana muffin hater...she says she only likes these!). To make gluten free, I replaced the all purpose flour with gluten free Bisquick and omitted the baking soda (since it's already in the Bisquick). We had 4 bananas, that needed to go so I also added a 1/4 c more Bisquick to make up for the extra banana. We made some with the brown sugar and some without. They are BOTH delicious!!"- jjmcain
Preheat oven to 375F / 190C / Gas Mark 5
Mash bananas. Add sugar and slightly beaten egg and mix well. Add the melted butter. Make a well in the middle and add the dry ingredients. Bake for 20 min.
I also remember my mother used to add brown sugar to the tops of the muffins before baking. This made them crunchy on top, but I haven't tried it myself.

ahewett 3 weeks agoI added the brown sugar on top and some vanilla in the batter. I would def make them again adding a little more flour and baking a few minutes longer.
ees55 8 months agoTasty banana muffins! I added some cinnamon, vanilla and walnuts for a bit more flavor and they came out very well. The muffins were done a little before 20 minutes.

savannahchase 9 months agoBaked for 20 min turned out wet. Even after an extra 5 min it still turned out wet and just did not taste right. Not sure how people are posting such rave reviews after following the recipe.
TaylorHelen19 9 months agoI just made these I had some overly ripe bananas and I needed to do something with them so I found this recipe. They are the easiest banana muffins I've ever made. They are so moist and sweet. I made one batch of 12 and I had to make more ! They are amazing ! I put a little butter on them and let it melt mmmmm!!

mzsammie 10 months agoI made these today was in the baking mood but didn't have much around the house.... my family loves banana's and I went on the hunt for something that required banana's :) My son says they were the best and has had 2.... (more if I would let him) My friend came over for coffee... we enjoyed some. They are almost gone! I did add a little more flour. And they were Delish. :) We also made a glaze and drizzled some on.... a fabulous treat indeed!! :) I will be doubling the batch next time!! I don't know if they will even last the rest of the day :D
