Terrible for you, but oh so good!!
Boil potatoes and mash. Mix potatoes, sour cream, soup, and 1/2 cup butter in large bowl. Add cheese, onion, season with salt and pepper to taste. Spread evenly in greased casserole dish. Mix french fried onions with remaining butter. Spread over potatoes. Bake at 350 for 25-30 or until onions on top are crisp. You may cover very loosely with tin foil if you are concerned about browning.
